The flesh is white and can be thin or thick depending on size, and texture has a meaty and melting quality. Grey Oyster mushrooms have a slightly chewy texture and are soft with a bittersweet aroma reminiscent of anise.

The Oyster mushroom is considered a delicacy in Japanese, Korean and Chinese cookery. When cooked, they have a mild and nutty, seafood-like flavor. They can be sliced and pan fried until crispy for a delicious appetizer, or sautéed in butter with salt and pepper for a nutritious side dish, or included in a casserole, soup or stew. Note it is important to dehydrate the Oyster mushroom before adding spices by heating in a pan or in an oven at 350°F for 40 minutes, turning once.
